Pink Grapefruit with Mint Jam

This spring we found a local farmer who grows all kinds of lovely pink grapefruit in a private orchard. The grapefruit are sweet, tangy and have the delicious taste of homegrown fruit.

We've candied the peels of this wonderful fruit and added fresh mint for a sweet treat with a little big of tang.

This is one of our favorite jams. We've been eating this one for breakfast, on sandwiches and anytime we need to remember the taste of spring.
